Every year I am asked for this recipe. My friend suggested I put it on my blog. I am sure, if you like sweet potatoes, you have made or tasted this recipe. Here goes.
Southern Sweet Potatoes
3 c. mashed sweet potatoes
1 c. brown sugar
1/2 c. milk
1/3 c. butter
2 eggs
1 tsp. vanilla
Combine all ingredients and pour into a glass baking dish. (I roast the potatoes in the oven, about 400 degrees, until they are fork tender. Then mix them together when they have cooled)
Topping:
1 c. brown sugar
1 c. chopped walnuts or pecans
1/3 c. butter
1/3 c. white flour
1 c. coconut (optional)
Mix all the ingredients and pour on top of sweet potatoes. Bake at 350 degrees for 30min. (If you make the dish ahead, don't mix the topping until you are going to bake. The nuts will become soft.)

I'm pretty sure my mom makes this. I, however, have never actually eaten it on account of my texture issues.
Minus the coconut, this is the recipe that I make every year!! I love it!!!! It's the best one I've found. A southern recipe for a southern girl!! :)
