
In a previous post I talked about a yummy zucchini pie. Many of you have asked for the recipe, so here it is.
Zucchini Pie
4 c. zucchini, peeled, cut into chunks (approx. 1/2")
1 1/3 c. sugar
2 tbsp. minute tapioca
2 tsp. cornstarch
1/2 tsp. salt
2 tsp. cinnamon
1/4 tsp. nutmeg
1/4 c. lemon juice
In a bowl stir all ingredients together. Place filling into your favorite pie crust. Brush your top crust with 2 tsp. of melted butter. Vent the crust. Bake at 400 degrees for about 40 min. til lightly browned.
I have made the mistake of slicing the zucchini instead of cutting it into chunks. That was terrible. The chunks really make it taste close to apple pie. I included a picture of my cute Grandma Ina. She gave me an interesting tip for making sure my pies do not get too runny. She puts round pasta into the venting holes on her pies. Tube pasta, that is large enough to stick out of the pie, soaks up the excess juice and then you can remove the pasta when the pie is done. She told me that she made a pie but was out of tube pasta so she used spaghetti! It worked! My Grandma is a pretty amazing woman. She is almost 90, still excercises everyday, has served 5 missions in the last 20 years, and still works at the Provo Temple 2 days a week and substitutes for those that can't make their shift. She is fun to talk to because she has this great laugh that makes everyone giggle. I am proud of her. I am the oldest grand-daughter (she calls me, jokingly, her "oldest living grand-daughter"). I love my Grandma.

I will probably never make that recipe (you know, zucchini issues and all) but HOW FREAKING CUTE is your grandma??? All of my grandparents are still living and I feel fortunate to be able to know them as an adult. It's an entirely different relationship and most people don't get that chance.
she is so cute. you look like her. so, I made zucchini pie (not this recipe, but I will have to try it) after reading your last post about it and I was amazed that it was good, and very apple pie-ish, just like you said. Marty, however, could not get over that it was zucchini. He thought it was weird. :) How did the applesauce turn out?

I'll have to try that pie. Zucchini bread is my favorite of them all.
I have to tell you a story you may already know about Utah and Zucchini. It is *Don't leave your car doors open during church* as you will return to a car full of Zuchini! We look for things to do with Zucchini in Georgia as well as with Vidalia onions, another great pie!
